Chef Adam Watten
originally from the Shenandoah Valley in Virginia and formally trained at The New England Culinary Institute. He continued training at some of the countries top restaurants in Washington DC and Portland Oregon. Arriving on Kauai almost six years ago to open Red Salt at The Koa Kea Hotel in Poipu.
During those six years he has worked tirelessly to forge meaningful relationships with Kauai's best producers including farmers, ranchers, and fishermen. The resulting cuisine is a unique blend of all things Kauai. Heavily influenced by the diversity of cultures and ingredients, and guided by his formal training he creates food that represents our current place and time on the beautiful island of Kauai
